Gluten Free Apple Crumble

You will enjoy making this quick and easy dessert which tastes delicious with whipped cream, or can be enjoyed warm from the oven by those who are allergic to dairy.

Ingredients
3 medium Granny Smith apples, peeled and diced (approx 4 cups chopped)
¼ cup granulated sugar
¼ cup raisins
¼ teaspoon cinnamon powder
¼ teaspoon powdered nutmeg or allspice
3/4 cup orange juice
2 tablespoons cornstarch
1 tablespoon grated orange zest
½ teaspoon vanilla extract (optional)

For the topping–

½ cup rolled oats, lightly pulsed
1/4 cup Rice Flour
1/4 cup Instant Oats Flour
¼ cup brown sugar
¼ teaspoon cinnamon powder
1/8 teaspoon xanthan gum
1/2 stick/ 2oz/ 4 tbsp butter

Method
Preheat oven to 375F (approx 190 C)

Butter 4 eight ounce custard cups (or an 8inch pie dish) and set aside
Combine apples with granulated sugar, orange zest, vanilla extract, cinnamon powder, nutmeg or allspice
Stir in the raisins
Mix 2 tablespoons of cornstarch into the orange juice and pour into apple mixture
Spoon into buttered cups and set aside.

To prepare topping—
Combine Bisquick baking mix, oats, brown sugar and cinnamon powder.
Cut in butter with pastry blender or two knives till mixture resembles coarse meal
Divide mixture into 4 equal portions and sprinkle each apple cup with crumb topping
Bake for 30-35 minutes
Serve warm topped with whipped cream or ice cream.

Dairy free version

Use dairy free margarine instead of butter
Make a simple caramel-orange sauce for a delicious topping—
In a small saucepan, mix 3 tablespoons dark brown sugar into ½ cup orange juice.
Place saucepan on stove-top over medium heat
While the juice mixture is warming, mix 2 level teaspoons cornstarch into ¼ cup orange juice.
Pour into saucepan and keep stirring till mixture thickens and comes to a boil.
Remove from heat.
Let cool for a few minutes.
Serve warm sauce with apple crumble.

Variation-
Add chopped dates instead of raisins

If you don’t have rice flour, use Gluten Free Bisquick instead.
