This product is a chemically derived product from a kind of bacteria and although it is claimed to be used to make that chewy texture, you should know many people have serious problems with it. (Me and my whole family get sick when we have it in anything. My whole family has dairy allergy and I&#039;m diagnosed Celiac.)
So, here&#039;s the scoop: you don&#039;t need it. It is a chemist/food industry person&#039;s idea of something to mimic gluten. You don&#039;t need it though. If you have a need for some more gummy or chewy texture, soak some chia seeds in water and use a few tablespoons of it. This also adds tons of antioxidants to your dish, plus fiber. I&#039;ve been gluten free for over 10 years and I can tell you, this xanthum gum that they put in all products gluten-free is simply not needed. I actually like the texture of all baked goods better without it. It really doesn&#039;t add anything to holding the product together either. Thank you again.
