Yes, we are still self quarantined but this video is one we filmed a while back and since we recently had a Asian Style Vegetable Stir Fry recipe, we figured, why not have one for the people who enjoy non-vegetarian food.
This dish is not just unique as far as the combination goes but is also amazing with the different textures. The Spring Onion Greens and the Cilantro give a freshness that is just amazing. We love any kind of Asian Food in our home and when it’s simple enough to make and tastes absolutely divine, even better!

Ingredients:
Japanese Eggplant – 1.5 lbs
Ground Chicken – 1.5 lbs
Spring Onions – 10 large stalks
Oil – 2 Tablespoons
Minced Ginger – 2 Tablespoons
Minced Garlic – 2 Tablespoons
Cut Green Chilies – to taste
Salt – to taste
Black Pepper Powder – to taste
Soy Sauce – 2 Tablespoons
Chili Sauce – 1 Tablespoon or to taste (Sambal/Sriracha)
Cilantro – 5 sprigs, finely chopped
Sesame Seeds – for garnish
Method:
1. Wash and cut the Eggplant to bite-size and set aside in a bowl of cold water.
2. Cut the Spring Onions and divide the Whites and the Greens.
3. In a large wok-style pan, heat the Oil on high heat.
4. Once hot, add the Spring Onion White and cook for 2 minutes.
5. Add the Ginger, Garlic and Green Chilies to the Oil.
6. Cook for a minute.
7. Add in the Ground Chicken and break it down till it becomes a crumbly mixture.
8. Add a little bit of Salt and Pepper (there will be Soy Sauce going in later).
9. Cook till the Chicken is almost cooked.
10. Drain the Water from the Eggplant and add to the wok.
11. Add a bit of Salt for the Eggplant, mix, cover and cook.
12. Keep stirring after every few minutes.
13. Check if the Eggplant is done with a knife (if it cuts like melted butter, its done).
14. Remove the lid and allow the liquid to reduce to your preference.
15. Add the Soy Sauce and the Chili Sauce and Mix.
16. Add in the Spring Onion Greens and Cilantro.
17. Serve with some Rice or Fried Rice with a garnish of Sesame Seeds.
Tips:
1. Use any of the other ground meats – park or beef. Just the cooking times vary.
