I do not eat eggs or dairy and have a lot of experience sweet making French toast with alternatives, so I thought I would offer my solution to this recipe for savory which was fantastic!

Tofu, firm 1/4 block chopped into pieces roughly
liquid (milk, non-dairy milk) about a cup or to make dipping consistency
onion 1/4 cup roughly chopped
green chiles 1/4 cup chopped or to taste
red chiles dried few, crushed (I used chiles made with homemade dried soy-yogurt chiles)
curry podi 1 tsp
coriander podi 1 tsp
panch puran 1 tsp (or any spice mix you like)
salt 1 tsp or to taste

Place all ingredients into blender or as I did, a plain bowl and blend until a smooth batter with the hand-held immersion blender. Then place smooth batter into flat dish, dip thin sliced pieces of bread and fry in skillet.
I fried lightly in scant palm/coconut oil. Heavenly with coffee.
