Hang in there, we are all in the same boat ?
Regards to the Khao Soi Recipe, there are lot of different versions of it depending on which region it is from. We used the Coconut Powder because we can then control the liquid but it is very easy to substitute with coconut milk or coconut cream. The Thai version does have ginger and galangal, whereas this version is a version that has made it&#039;s way into India, where Galangal is not a native vegetable, hence it&#039;s missing that. Also Tofu, easy to add and like we mentioned, it is not traditionally a vegetarian dish but it&#039;s your kitchen and you are the boss...?
