Hello Richard,
There are a whole lot of options you can use in place of the Naan like Tortilla (yes, like you mentioned above), Pita breads, Flatbread (available at grocery stores), Phyllo sheets...amongst lots of other options.

I suspect employing a cast iron griddle or regular pizza stone would be necessary since tortillas are quite flexible. Going to have to try it out.]]></description>
