If you’re running out of healthy and satisfying lunch ideas, try this delicious Cracked Wheat (Daliya) Salad. Don’t let the term “salad” fool you. This hearty bulgur/bulgar recipe will keep your tummy happy for a while. Enjoy!
Serves – 2
Ingredients:
Cracked Wheat (Daliya) – 1/2 cup
Broth (Vegetable or Chicken) – 1 cup
Pine Nuts – 1 Tbsp
Sliced Almonds – 1 Tbsp
Olive Oil – 1/2 Tbsp
Onion – 1 cup, finely chopped
Green Chilies – to taste, finely chopped
Bell Pepper – 1, diced small
Tomatoes – 1/2 cup, diced
Black Pepper – 1/4 tsp
Salt – to taste
Lime/Lemon Juice – to taste
Dried Apricots or Cranberries or Raisins – 1 Tbsp
Cilantro (Coriander Leaves) – 5 sprigs, chopped
Method:
1. In a medium size saucepan, add Cracked Wheat and Broth. Bring to a boil, lower stove to a simmer, cover and cook for 10 minutes. Fluff with a fork and remove into a mixing bowl. Allow to cool to room temperature.
2. In a small skillet, dry roast Sliced Almonds and Pine Nuts lightly. Keep aside.
3. Heat Olive Oil in the same skillet.
4. Add Onions and Green Chilies. Cook until onions are translucent (2-3 mins). Keep aside in a mixing bowl and allow to cool to room temperature.
5. To the cracked wheat and onions, add remaining ingredients – Bell Pepper, Tomatoes, Black Pepper, Salt, Lemon/Lime Juice, Apricots, previously roasted nuts and Cilantro.
6. Mix well.

Do we use the same method (to boil cracked wheat with water) to make kansar? And in the end add powdered sugar and ghee?

Yes, you can follow the same method but you can add a little ghee and sugar to the water. You can add additional ghee and powdered sugar on top while serving.

We have not used this type of wheat before but it should work just fine. If you need to soak in water before using, you may want to try to soak it in broth for additional flavor. And, if you do try it out, please let us know your feedback…it will help others as well. Thanks.

Honestly, we have never made it with Oats (but it is excellent with Cous Cous and Quinoa). Let us know if you do try it, it will be interesting to know.
if i use couscous, how much water do I need to add? can i pressire cook it? if yes, how many whistles?

Couscous is very easy to prepare. Use a 1 to 2 ratio (couscous to water). Boil water in a pan with lid. Once the water boils, turn off the stove, add in the couscous and a bit of salt, stir, cover and keep for 15 minutes. Open and fluff up with a fork. Add remaining ingredients.

Tried this just now and could not wait to eat and post comment. Just finished eating in one go and now typing…I have never had such daliya delight. It is healthy and tasty both…a rare combination though!!!
I changed the original recipe a bit. I used couscous instead of daliya and added a bit of roasted cashews and walnuts and sultana raisins along with almonds and pine nuts. I added green peas and sweetcorn too to it. It is out of this world now. Best salad till date I would rather say.
Will be in my take along lunch menu for me and my hubby as it very filling too. No problem untill evening and hence no snacking in between and stacking our tummys with rubbish crisps.

Yes, you can definitely use plain water instead of broth. You will lose out on some of the depth of flavor that the broth will bring to the recipe, but it will still work fine.

It’s basically the same except that the texture of the cracked wheat for kausar is much finer (similar to sooji). This type of cracked wheat is used to make faadaa lapsi.
