Healthy Breakfast Recipe

Try this quick healthy breakfast with cottage cheese that will keep you going until lunch or have it as a protein packed snack after a workout. We love the fact that it is easy to make and in fact, can be made ahead so when you return post workout, you can just relish it. Enjoy and stay healthy!

Ingredients:

Cottage Cheese – 3/4 cup
Apple – diced
Caramelized Almonds – to taste (click here to learn how to caramelize almonds)

Method:
Mix all three ingredients and enjoy!

  1. I tried this recipe today. Not only did it taste good, but it really fills me up. I had this for breakfast at 10 AM. Its 4 PM and I did not even feel hungry enough to eat lunch.

    1. Hi Anuj,

      Cottage cheese is a loose cow’s milk cheese that has a bit of whey in it. There are no good substitutions for exact flavor but you could use Greek or strained yogurt.

    I follow your recipes a lot here in India but some ingredients are not available here easily. What would one use in place of cottage cheese? I always thought Paneer was cottage cheese but now I am not so sure…

    1. Paneer is just pure milk-fat that is separated from its whey. Cottage cheese is actually a fresh cheese (not aged) that goes almost through similar processes used to make other cheeses. Milk’s acidity is increased by adding active yogurt starters and rennet. It’s basically a curdling process… After this the curds are used with varying techniques and aging to make different cheeses. Cottage cheese does not go through any pressing and aging like other cheeses do. Anyhow… Your best bet is to use yogurt in place of cottage cheese which makes quite good and healthy breakfast as well. Or same ingredients can be used with cooked oatmeal…obviously protein content will be different!

      Although paneer is called cottage cheese in India, it is a completely different type of cheese here in the US. If you cannot find it, strained yogurt is also a good substitute.
