If you are looking for a quick and easy item to take for a picnic, try this Black Bean and Corn Dip (salsa). It takes just minutes to make and is served with Tortilla chips. Also serves as a great make ahead appetizer for your parties at home. It’s fresh, healthy and your friends will be asking for more!
Ingredients:
Black Beans – 15 oz can, drained & rinsed
Whole Kernel Sweet Corn – 15 oz can, drained
Onion – 1/2 medium, finely chopped
Bell Pepper – 1/2 , finely chopped
Tomato – 1 large, finely chopped
Jalapenos – de-seeded and finely chopped to taste
Cilantro – 5 sprigs, finely chopped
Salt – to taste
Lime Juice – to taste
Taco Seasoning – 2 tbsp or to taste
Method:
1. Combine all the ingredients in a bowl.
2. Allow the mixture to marinate for approximately 30 minutes.
3. Serve with Corn Chips.

where do you get the taco seasoning? I live in Chicago (: Also, can i also add a little bit of mozzarella cheese?

Cream cheese may be a little thick to mix in but sour cream or a mixture of softened cream cheese plus sour cream may be a better option. It will not ruin the recipe but the outcome will definitely be different. The original version is more like a fresh salsa.
And Can I substitute green chillies for Jalapenos ?

Hi Alka,
We have used Tostitos Scoops (corn tortilla chips) to serve them. You really cannot fill them and keep them (it is only for the picture so you get an idea of what kind of chips to use) else they will get soggy. Just keep a bowl of chips nearby.

Taco seasoning can be bought at any American store, such as Jewel, Dominicks and even smaller food stores should carry it and also Hispanic Grocery stores should definitely have it. If you have stores like Sams or Cosco near you, I recommend you go there. You will get more with less money.

Marinating means to soak foods in a seasoning, often acidic or citric, in order to allow the flavors to seep into the food. So, once you marinate the salad, the lime/lemon juice seeps into the beans, corn and veges and flavors the whole dish as opposed to just flavoring the outsides.

We made this dip over the 4th of July weekend and it was super easy and delicious, two of my favorite combo!
Also, a lot of grillin’ going on during summer, could you please provide grilling recipes for Veggies? We grilled paneer last year with mushrooms, bellpeppers, onions, etc. and it turned out excellent. But, I want more ideas….
