Prep Time: 5 mins
Cook Time: 10 mins
Serves: 4
Ingredients:
Sweet Potatoes – 1 lb (peeled and diced)
Oil – 1 Tbsp
Salt – 3/4 tsp or to taste
Cumin Seeds – 1 tsp
Whole Dry Red Chilies – 3 or to taste
Granny Smith (Green) Apple – 1 (peeled and shredded)
Green Chili – 1 or to taste (finely chopped)
Cilantro – 5 sprigs (finely chopped)
Roasted Peanuts – 2-3 Tbsp (roughly chopped)
Lime Juice – to taste
Salt – to taste
Iceberg Lettuce – 1 head
Method:
1. Heat Oil in a medium pan (skillet) with a lid.
2. Add diced Sweet Potatoes and Salt and mix through.
3. Cover and cook until sweet potatoes are tender but not mushy (approx 8 mins)
4. In the meantime, dry roast Cumin Seeds and Dry Red Chilies until fragrant.
5. Allow the cumin seeds and chilies to cool before roughly grinding them.
6. Sprinkle the spice powder over the cooked sweet potatoes and mix through.
7. In a mixing bowl, mix together shredded Green Apples, Cilantro, Green Chili, Peanuts, Salt and Lime Juice.
8. Cut Lettuce head through the middle so that lettuce “bowls” can be removed.
9. In each lettuce bowl, add a small amount of sweet potatoes and top with a little shredded apple mixture.
10. Roll the lettuce leaf into a burrito type wrap and enjoy immediately.

I just found this recipie and I must try it this week.
I don’t know of a replacement for the sweet potato but the apple can be replaced with Jicima. It has a texture similar to an apple, but more mild in flavor. It also has some “clean” notes similar to celery. It’s very cooling and it pairs very well with Chiles and cilantro.
Its what I will be doing this week because I am allergic to raw apples.

I have read somewhere that you can use honey as a substitute for brown sugar. You would have to use about 7/8 cup of honey for every cup of sugar. You would also have to reduce any other liquid in the recipe by 3 tablespoons. WE have not tried it, so we cannot give you an accurate feedback if it works well or not. Sorry.

Made it, loved it, kids were especially pleased. This despite an error on my part- I bought Romaine lettuce hearts rather than a cabbage-shaped lettuce head, and this didn’t help with making lettuce-wraps. Instead, we ate it as lettuce boats with the filling.

Not sure what sweet potatoes are called in Tamil (maybe some of our other viewers can help). Regarding the tins, very few items taste good right out of the tin. You should probably make something out of it.

Fresh roasted and ground spices make a world of difference in aroma and flavor. However, if you don’t have them, cumin powder and chili powder will work.

Just wanted to add that Vitamin A is a fat soluable vitamin. Without proper fat in the diet Vitamin A cannot be absorbed.

One worried question, though: will these potatoes be genetically mutated to increase “nutrition?” I’ve done quite a bit of research into GMO foods and find that the potential for harm could be devastating and irreversible.
