Cookies are enjoyed by kids and kids-at-heart. These gorgeous Eggless Double Chocolate Cookies will make you do a double-take and grab some double-helpings. Make a big batch, bake some for now and freeze some dough for later. Since summer holidays are here, get the kids to help out and get some cookie-points with them 🙂
Prep Time: 15 min
Chill Time: 30 min
Bake Time: 20 min
Cooling Time: 15 min
Makes: approx 20-24 cookies
Ingredients:
Softened Butter – 10 tbsp
Powdered Sugar – 1/2 cup
All-Purpose Flour – 1 cup
Unsweetened Cocoa Powder – 2 tbsp
Baking Powder – 1 tsp
Vanilla Extract – 1 tsp
Chocolate Chips – 1/4 – 1/2 cup (optional)
Method:
1. Combine the Softened Butter and the Confectioners Sugar and mix till creamy.
2. Add in the Vanilla Extract and mix. Keep aside.
3. In a separate bowl sift the dry ingredients: All-Purpose Flour, Cocoa Powder and Baking Powder and mix.
4. Add the dry ingredients to the Butter mixture a little at a time, mix and incorporate well.
5. For the Double Chocolate Chip Cookies, add in the Chocolate Chips the batter and mix. Otherwise skip this step.
6. Allow the dough to chill the refrigerator for 30 minutes.
6. Pre-heat oven to 300 Degree F/150 degrees C.
7. Line a cookie sheet/pan with foil or parchment paper.
8. Once out of the fridge, roll out approximately lime-size cookie balls and place them about 3″ apart.
9. Decorate with a Chocolate Chip on top if desired.
10. Bake in the heated oven for 20 minutes or until done.
11. Once out of the oven, allow them to cool on the cookie sheet for about 5 minutes and transfer to a cooling rack.
12. Allow them to cool all the way through and store in an airtight container.
Tip:
1. Make a few cookies and save some dough for later. Freeze the dough for 1 month or refrigerate for 1 week. Defrost and bake.
2. To omit the chocolate, replace the Cocoa Powder with additional All-Purpose Flour.

hi so i got this land o lakes cocoa classics hot cocoa mix, and i didnt get that same color, at all … and i used salted butter i wasnt sure what kind you guys were using as you only said butter,… and they look white, can you tell what brand of cocoa you guys used ?thanks

You have to use pure unsweetened cocoa powder…not the hot cocoa mix (it has all kinds of milk and sugar added). Hersheys is one of the brands we have used in the past.

Vanilla adds a good amount of flavor but if you are opposed to it, then you can definitely leave it out.

I made cookies which turned out to be good. Appreciate if you could provide measurements in grams which would help us to be more accurate. Secondly is there any substitute for butter eg. oil. I could make only 14 cookies (same size as yours) whereas you made 24 with same amount of material. How come ?

Though you could substitute oil for butter, the texture may be affected. Butter has a different mix of milk fat and moisture.
I just wanted to thank you and say I’ve learned this recipe by heart, it needs so little ingredients and it’s so easy we’re making it whenever we’re in need of something sweet. 🙂 I’ve started adding little milk into sugar and butter to make it easier to mix and it helps. Thanks for sharing!

I have tried a few recipes off your website, and so far, they have come out GREAT! all except for the eggless chocolate cookies. Something went wrong drastically in the batter – the dough was too creamy and i had to add more flour to get the texture right. And with the amount of dough I made, I ended up with 50 cookies, so you can imagine 🙂 They tasted alright though. I was hoping you could give me the measurements in grams…as that would be much easier?

We are not sure what Melody chocolate is but something like M&Ms would work (the mini ones), or you can use little pieces of baking chocolate.

Sorry for the late reply. Usually, refrigerating the dough prevents the cookies from spreading out and becoming too thin. 10 Tbsp is one stick plus two tablespoons (or 1/2 cup plus 2 Tbsp).

and i loved these… this recipe is a keeper..my sons finished half of the cookies..during the day…and i had to make them again in the night…. 🙂
just one thing., i live in japan and the cup sizes here are different than the american sizes..please mention the amount of ingredients in metric for all the baking products….i used some internet chart to convert the “cups” to “gms” ….but somehow ..the number of cookies i made in one go were less …. but they were so delicious that ….they were eaten in no time..by my kids…and the vegetarian guests the next day too…!!

The heat resistant silicone ones work really well. Get good quality ones that bend easily. They tend to clean up much better than the cheaper ones. Remember, not all silicone ones are heat resistant so be sure to read the label and make sure it is.

Ouch …..Too much butter………i make all my cookies with olive oil or coconut oil and they turn out delicious. There is not need to use butter to make out of this world cookies AT ALL. Also I use to apple sauce to cut down on oil. IF you make them healthy, you can have more 🙂 or without any guilt 🙂

We have not tried Splenda but it should work. Look for the Splenda for baking as the texture is similar to sugar and the quantities are usually the same as well.
Info for all happy bakers, if you dont like eggs the best option is very ripe bananas, it acts as a binder & add walnuts for a very happy ending. I do not use eggs for cakes till a friend told me this idea & I haven’t stopped using babanas.!!

I have not tried the recipe as yet, but 1 tsp baking powder is just right for the quantity of flour and other ingredients.
WOW too much butter. Not a very healthy choice for kids. Homemade cookies are suppose to be good for kids but not with lots of butter.
