Serves20-30 pieces
Ingredients:
Dates (Khajoor) – 3/4 cup, chopped
Dry Figs (Anjeer) – 1/4 cup, chopped
Walnuts (Akhrot) – 1/4 cup
Cashew Nuts (Kaju) – 1/4 cup
Blanched Almonds (Badam) – 1/4 cup
Ghee- 1 tbsp
Pistachios (Pista) – 3 tbsp, chopped, for garnish
Method:
1. Chop all the dry fruits into small pieces. If you are using dates with seeds, make sure you take them out and discard them
2. Take a heavy bottomed pan or kadhai, and heat the ghee on medium heat.
3. Add the Dates first and stir it for 1-2 minutes. Cook a little longer if using fresh Dates.
4. Add in the Figs and incorporate into the Dates mixture.
5. Cook for 2-3 minutes.
6. Add Almonds, Cashew Nuts and Walnuts and mix well.
7. Keep the heat to the lowest possible setting and keep mixing the dry fruits till they are well incorporated.
8. Turn off the heat after 2-3 minutes and transfer into a platter and let the mixture cool down.
9. Once its cool enough to handle, rub some Ghee on your hands and divide the mixture into two.
10. Shape the mixture into 2 cylinders, while pressing it firmly.
11. Once the roll is made, take a plate and spread out the chopped Pistachios.
12. Roll the mixture on the chopped Pistachios while pressing lightly.
13. Once the garnishing is done, roll the mixture tightly in an aluminum foil or plastic wrap and secure both ends firmly.
14. Refrigerate this for 3-4 hours and them into ½ inch pieces.
Tips:
1. Use different nuts – Pecans, hazelnuts, pine nuts
2. Use Poppy Seeds as a variation instead of Pistachios.
