Perfect for the holidays and a one step dessert – can life really get better than this? Milk Cake is a recipe that is simple and easy and yet has the look that you’ve probably slaved over the dish for hours π ! The combination of the raisins, dates and the cranberries and a great suprise element in the creamy milky flavor of the ricotta. Did we mention that it’s eggless? Thank you Payel Mukherjee for sharing this awesome and easy dessert. This one is a keeper for sure!
Prep Time: 5 min
Cook Time: 30-40 min
Serves: 8-10
Ingredients:
Ricotta Cheese – 15oz / 425gm
Semolina/Suji – 1/4 cup
Sugar – 1/2 cup
Golden Raisins – 1 tbsp
Dried Cranberries – 1 tbsp
Cashews – 1 tbsp, broken
Method:
1. Pre-heat Oven to 450F / 230C.
2. Mix all the above ingredients in a bowl.
3. Mix and allow the Sugar to melt and combine.
4. Grease an oven-proof 6″X6″ pan.
5. Pour the mixture into the pan.
6. Place the pan in the pre-heated Oven in the middle of the oven and in the middle of the rack.
7. Bake for 30-40 minutes till the edges get a little brown color.
8. Take out of the oven and allow the Cake to rest for 15 minutes.
9. Flip the Cake out of the pan and cut into small pieces.
10. Serve warm.

The most common ones are queso fresco and goat cheese. For this recipe, we have not tried substituting but let us know your feedback if you do try…

Sorry for the late reply Ana. As a general rule of thumb, anything that contains dairy products should be stored in the refrigerator.

Most places have an Indian grocery store. That would be the best place to find sooji. If not, it is called semolina so you might be able to find it in a regular grocery store.

Made this milk cake with panner now. Had to give it a good hand kneading. I didn’t get the consistency shown in your video to pour into the baking dish, before baking. Even then it came out very well (slight crust outside and soft inside). Perfect sweetness also. Thanks for sharing. π

Rose water is pretty mild so a little bit will probably taste good.
We’ve been addicted to this cake after I found the recipe! I’ve been baking it every day this week: in bigger pans (thinner cake) and smaller pans (thicker cake),with lemon zest or almond extract. I couldn’t find semolina in our HEB stores and used regular flour instead. It works! I recommend using lots of dry fruit (we love raisin/cranberry mix!)and skip the nuts. Nuts, even roasted, get soggy, while dried fruit regains moisture and becomes more palatable.

Your Pyrex 9 x 11 should work…the cake may be slightly thinner. Although we have not tried doubling this recipe, the baking time will probably need to be adjusted as well. Be sure to keep a close eye on the cake.

Hi Sajna,
This cake does not need any topping. We tried it cold and warm – and we preferred it warm. You can dress up the dessert by poring some chocolate syrup or some chopped dry fruit on it.
