Impossible burgers are the rage right now, but how about a flavorful burger thatβs good for you and you can make it at home? This Black Bean Burger recipe is so yummy that you may be be looking for excuses to make it again and again. The subtle flavors along with healthy ingredients just adds to the charm. Black Beans have an amazing flavor, not to mention that they are hearty and substantial. Make it a meal or a snack and you have a winner!
Ingredients: (makes approx 6 large patties)
For the Patty:
Black Beans – 1, 15 oz can, drained and rinsed
Olive Oil – 1 tbsp
Onions – 1/2 cup, chopped
Garlic – 2-3 cloves, chopped
Mushrooms – 1/2 cup, chopped
Bell Pepper/ Capsicum – 1/2 cup, chopped
Taco Seasoning – 1 tbsp or to taste
Shredded Carrots – 1/2 cup
Whole Wheat or Whole Grain Bread – 1 slice
Cooked Brown Rice – 1 cup
Frozen Corn – 1/2 cup
Salt – to taste
Pickled Jalapenos – to taste (optional)
Soy Granules – 1/2 cup
Instant Oats – 1 cup
Cilantro – 5 springs, finely chopped
Eggs – 2, lightly beaten
Panko Bread crumbs for coating
For the Burger:
Toasted Buns
Sour Cream
Salsa
Method:
1. In a pan, heat up 1 tbsp of Olive Oil.
2. Once hot, add in the Onions and Garlic and allow them to caramelize a little.
3. Next add in the Mushrooms and let the moisture evaporate.
4. Add in the Bell Pepper and cook for a little bit (1-2 min)
5. Add in Taco Seasoning and allow it to coat the vegetables and turn off the stove.
6. Once the stove has been turned off, add in the finely shredded Carrots and mix well.
7. Set the pan aside and allow it to cool down.
8. In a Food Processor, break up a slice of bread into big chunks.
9. Pulse the Food processor about 3-4 times till the bread crumbles.
10. In the Food Processor, add Cooked Brown Rice, Corn, Cooked Vegetables, Salt, Pickled Jalapenos,
11. Pulse about 6-7 times.
12. Add in 3/4 of the can of Black Beans.
13. Pulse for another 3-4 times till everything is mixed well.
14. Transfer the mixture to a bowl.
15. Add in the Soy Granules, Instant Oats, Cilantro & the balance of the Balck Beans.
16. Mix gently but well.
17. Good time to do taste test before adding in Eggs.
18. Add in the eggs and mix well gently.
19. Put the mixture in the fridge and allow it to rest for 30 minutes.
20. In a bowl, pour out some bread crumbs for coating the burgers.
21. Get a skillet heating up on medium heat with a tsp of Oil.
22. Divide up the mixture into equal portions (according to the number needed and the size required)
23. Take a portion and start rolling and making a patty.
24. Dip into the Panko Bread Crumbs and coat them well.
25. Once the skillet is hot, place gently, press the patty down if it is too thick and move it around so it gets coated in the Oil.
26. Allow it to cook on the bottom side.
27. Drizzle a little Oil on the top and spread it and flip very gently.
28. Allow it to cook on the flip side as well.
29. Once done, place on a toasted Bun.
30. Garnish with Sour Cream and Salsa and serve.

I finally tried this recipe but had to substitute a few things. I had no soy granules so I added an extra 1/2 cup of brown rice and I did substitute chickpeas for black beans. But I have to tell you that these burgers were FABULOUS. I am a vegetarian, but my sis is not and the next thing I know I get up the next morning and she has scarfed down two of them (for breakfast) and was raving about how great they were!! These are much much better than anything you can buy in the store. Thanks so much for a recipe that I know I will use for years to come!!!

This recipe makes approx 6 large burgers. Even with the egg, it is fine to freeze the patties. Eventually, you will be cooking them on the skillet and the egg will get cooked.

The poha will not ruin the taste but since we have not tried it personally, we cannot comment about the texture. The oats just makes it a bit healthier than using rice.
How to use cracked wheat in this recipe,I mean should I boil it or dry roast,or steam…….I am confused.Plz do reply.also the mentioned quantities yield how many patties?

Brown rice really adds a different level of texture that white rice will not provide (it will just get mushy). However, if you are using cracked wheat, you may be able to mimic it.

We have not tried this recipe with cracked wheat but everything needs to be fully cooked (besides veggies that can be eaten raw). To cook cracked wheat you need twice as much water (similar to rice). We also have not used tofu, but you can try using the extra firm variety (add it to the food processor when you are pulsing everything together). Please note that the texture may be different because you are using different ingredients.

We have all been there and done that…picked up the wrong thing in a hurry π
In this case you are not too far off – cook the chunks as mentioned on the box, squeeze the water/liquid and just pulse it in the food processor till they look like granules π

Hetal and Anuja, how many patties would i get for the above quantity (palm size patties) and i want to store it in freezer, for that at which point of time i need to coat the bread crumbs i mean before freezing or during the time of frying (i mean once the frozen patties are taken from the freezer, if so how it would stick to the patties) ? If suppose i coated it earlier doesn’t it get soggy once i fry the burger ?? PLs reply hetal. Waiting for your reply and then only i will proceed. Planning to make about 40 patties.

A regular Indian mixie does not work the same as a food processor…it will mash the mixutre too much. It would be better to mix everything by hand and break it down slightly as you go.
A tip: add a slice of cheese on top of the burger during the last minute of cooking. Yum!

Most US grocery stores carry Refried Beans and it says “Refried Beans” on the can. It is available in the grocery store aisle that has all other Mexican and ethnic foods. Mexican Beans Chilli is not the same. If you read the ingredients, it should say, Pinto Beans, Salt, Water. If you are a vegetarian, please look at the ingredients and make sure it does not say “Lard”.

Looks like you over pulsed the mixture π The beans are carbs and they will get thick once they cool down in the fridge. In case they don’t, add a little more bread crumbs, oats or beans to form a patty.

You can do that but honestly, Panko is a class apart. The crunch will stay and makes the dish and unlike bread crumbs, it does not get soggy.

You can use rajma or chana (even chouli). The key is to not overcook them. You want some texture else the whole burger will be mushy and pasty.

In the US, black beans are available as dried beans that you soak and cook or in cans (tins), ready to use. They are black and approx half the size of kidney beans. We have not substituted any other beans for this recipe, but you may be able to use chana (chickpeas). You need a bean that has a little more texture. Kidney beans would not be a good substitute as they get mushy. Soy granules are available in Indian grocery stores and many health food stores. They are made from soy protein and are used to give texture to foods. There is not a good substitute for them so if you don’t find them, you can leave them out.

You could do a Vegetable Biryani and Chana Masala. Serve it with raita and store bought naans. The biryani is a bit of work, but it is a substantial meal and you could make it and the chana the day before.

Sorry, we don’t know of anyone in the Irving area that does tiffins. There is someone in Plano, but they don’t deliver…you have to pick up (a long drive for you).

Is oats added for absorbing moisture? Can oats be added to cutlets for holding the veggies?
Also, have you tried baking the burger in the oven instead of on the skillet? I thought it could help in getting the color for the sides too but might have to flip it once. Just a thought.

to desi girl-Hi i do remember seeing a baked breaded eggplant on the food tv channel recently. Flour-egg-panko then bake 400 degrees for i believe 20 minutes. i think it was sandra lee. But as a vegetarian, and also knowing that many vegetarians avoid eggs, i do know that flaxseed mixed with water makes a gelatinous stick so you might try that instead of the egg . Or egg replacer mixed with water,or maybe buttermilk if you use that. Also anuja, what can i use instead of soy nuggets in the bb-burger?
