Whisk the wet ingredients together in a big mixing bowl
Sugar – 1 1/2 cups
Vegetable oil – 1 cup
Egg – 3
Milk – 1/4 cup
Vanilla – 1 tsp
In a separate bowl, mix all the dry ingredients.
Flour – 2 cups
Baking Soda – 2 tsps
Cinnamon – 2 tsps
Salt – little
Now mix wet and dry ingredients together, don’t need to beat, just mix with spatula.
Add Carrot (grated in food processor) – 4 Big or 6 small
Raisins/Nuts – optional
If the mix is too thick, add some more milk.
Put muffin paper cups in the muffin tray and fill the muffin cups to 3/4 with the mix.
400 degree for 1st 10 min 350 degree for 20 min.
Makes 12 muffins.

It is not our recipe but we think All Purpose Flour is used for this recipe.
Thanks Anuja:).. Yesterday I tried this dish it came out good, but still for safer side I prepared gulab jamoon also which is my hubby’s favourite.. and for my surprise he asked for more muffins and not jamoons…:))
i tried it.
it was nice,fluffy&yummy.
I used apple instead of carrot.
