Vegetable Puffs are a wonderful snack option for the days that you want something substantial and you can’t wait very long for it to be made!! These College-Canteen favorites are wonderful and the will take you back to the nostalgic ‘college days’. Relive the memories, at least the good parts with this easy recipe!
Ingredients:
Puff Pastry Sheets – 1 box (from the frozen section of a grocery store)
For the Stuffing:
Oil – 1 tsp
Onions – 1/4 small, finely chopped
Potato – 1 small, shredded
Salt – to taste
Carrots – 1/4, shredded
Paneer – 1/4 cup, shredded
Cumin Powder – 1/4 tsp
Coriander Powder – 1/2 tsp
Turmeric powder – 1/8 tsp
Chaat Masala – 1/4 tsp
Dry Mango Powder (Amchur) – 1/4 tsp
Red Chili Powder – to taste
Method:
1. Take the sheets of Puff Pastry out and thaw them at room temperature for about 40 minutes.
2. Pre-heat the Oven at 400 degrees Fahrenheit.
3. Now for the stuffing, take a small skillet and heat Oil on medium heat.
4. Once hot, add in the Onions and saute till they turn translucent.
5. Add in the Potatoes and a little salt. Mix well, cover and cook for 2-3 minutes till the Potatoes are cooked.
6. Add in the Carrots and the Paneer. Mix.
7. Add in the spices – Cumin Powder, Coriander Powder, Turmeric Powder, Chaat Masala, Dry Mango Powder and Red Chili Powder.
8. Mix really well and keep aside.
9. Cut the Pastry sheets strips into 3s to form a square.
10. Put 1 tbsp (approx) of the stuffing in the center.
11. Fold the Pastry Sheet to make a triangle.
12. Use a fork and gently, but firmly, press into the sides and press away (to form a design and help seal)
13. Put the Puffs on a cookie sheet lined with foil.
14. Place in the pre-heated oven at 400 degrees F for 15 minutes.
15. Once they are out of the oven, transfer them to a cooling rack and allow them to rest and cool down for 5 minutes.
16. Serve with chutney or ketchup.
Tips:
1. Use any vegetable and spice combination for the Puffs.
2. It is very important to allow them to cool for 5 minutes – this will make the puffs nice and flaky AND it won’t burn your mouth.
3. The Cooling rack is great but if you don’t have one, improvise – take the oven rack and give it some height and use that.
4. Optional – add finely chopped green chilies or/and cilantro.
4. Use up left-overs subzis, keema or just scramble some eggs – be innovative!
dear,
can u please tell me how long should i preheat the oven
thank u
Hi Hetal/Anuja,
Great website. Wonderful recipes.
Do you guys put butter on the pastry before baking? I saw somewhere they brush egg on the top of the pastry after the fold the curry in. Since I don’t eat eggs I thought of using butter to make it moist. The last time I made these they were not that moist.
thanks,
Rujuta
Please share name & location of shop from where u buy PUFF Pasrty Sheets.
Also the make.
These are not available – only samosa patti is available.
Hi Aniruddha, where do you live? Which country…?
Hi Ladies,
Is it possible to make this in advance and then pop it in the oven just before serving? I am thinking of making this for a 25 people party, and don’t want to be making this at the last minute…
Any advice would be much appreciated.
Thanks
Hi hetal/anuja,
I wanted to ask if i can use frozen crescent rolls (like pillsbury) to stuff and make puffs instead of using puff pastry sheets? Awaiting ur response.
Thanks 🙂
Great video. I love that you’re teaching a very flexible technique, not a rigorous exacting recipe. It’s a simple one, too, that yields a very special, complicated seeming product. It’s exactly what I was looking for when I started my search a few minutes ago. Thanks again.
Hi Hetal, Anuja,
Can you please let me know how can i make jain puff?
Thanks.
YUMMY YUMMY IN MY TUMMY V INDIANS RULE
THATS NOT NICE, THATS YUCKY THEY PUT MEAT
Hi Hetal and Anuja,
Can I do all the steps until the puffs are ready to bake…. Then refrigerate them until my guests arrive, maybe around 1 hour, so that I can bake them and serve my guests hot. is it possible ?? If I can refrigerate should I thaw them before I put in the oven and how long?
Please answer.
Hi Sobhana,
Yes, you should be able to stuff them and keep the puff in the fridge for about an hour. Don’t keep them too long or they may not puff well. They can go straight from the fridge to the oven…no need to bring them to room temp.
Thanks a lot Hetal for the response. I will try this way. 🙂 Heatl and Anuja…U both rock 🙂
i loved your receipt. I have with me Spring roll pastry sheets. frozen. can i use that instead?
Hi Pooja,
Unfortunately, spring roll sheets will not work with this recipe. The puff pastry is made with layers and layers of sheets put together with butter inside, making it light and flaky when baked. We have an egg roll recipe in which you could use the sheets.
hai i love ur site. plz can u tell me if i can make these puffs in microwave since my oven is not working.
Hi Deepthi,
Unfortunately, the puff have to be baked in a regular oven, not a microwave.
Hello Hetal and Anuja,
I tried this out today and the taste was simply superb…Your 2 ladies rock :-), luv you for all your recipes.
While, my Puff was great in taste, i think it wasnt that great in shape :-), i did thaw it for 40 mins but by the time i put the mixture and put them in on the tray,it got little soggy and so got little bit deformed shape :-(, but over all they tasted yummmmyyyyy…and i have only u both to thank….they taste exactly like the patties we get in traditional bakery stores in India…so thats a million once again!!!
I am writing from Denmark. I wanted to make puff at home. your website and way of presentation is so wonderful…..i just love watching it again and again…
lots of love and good wishes to you both lovely ladies.
Thank you Pranav! We’re glad you are enjoying SMTC!

To my new home, I don’t have oven there. So can I bake them in grill.
Because I m heartly craving for it.
Hi Pari,
Puff pastry really needs to be baked. Maybe you can invest in a toaster oven.
What can I do with readymade puffs…bought some from the bakery n its got too much pepper in it….Help!!??..
Hi hetal and anuja.
I used to try new recipes from your treasure.
I just wanted to know that from where can i find puff pastry sheets. I tried to search it in to A&P but didn’t get it. Can you please tell me the grocery store’s name from where i can easily find it.
Thank you in advance.
Ok I got the answer.

This always take me more that 15 minutes to cook!!! Today my husband had to take them to work for an office party & it took me almost 30 mins!! at 400 F … dont know why.this happens whenever I make puffs. I thaw them for 40 mins as the pepperidge farms puffed pastry sheets box says!
