For Mother’s Day, kids love to “surprise” moms with homemade treats from the heart. Here is an easy cookie recipe for your kids to try out and impress Mom on her special day. Older kids can do it “all by themselves” and little ones can spend precious “mommy time” bonding. If you don’t have kids, don’t worry…its one scrumptious cookie that you just have to try!
Prep Time: 10 mins plus 30 mins chilling time
Bake Time: 13 – 15 mins
Makes: 20-24 cookies
Ingredients:
All-Purpose Flour – 2 cups
Baking Soda – 1/2 tsp
Salt – 1/4 tsp
Quick Oats (uncooked) – 1 cup
Butter – 2 sticks (1 cup ), softened
Sugar – 1/2 cup
Brown sugar – 3/4 cup
Eggs – 2 large
Vanilla – 1 tsp
Lemon Juice – 1 tsp
Chocolate Chips – 2 cups (approx 12 oz)
Walnuts – 1 cup, chopped
Method:
1. In a mixing bowl, combine Flour, Oats, Baking Soda and Salt.
2. In a separate mixing bowl, cream together softened Butter, Sugar and Brown Sugar with a hand mixer (approx 2 minutes).
3. Add one Egg and beat into the mixture.
4. Add second Egg and continue to beat until incorporated.
5. Add Vanilla and Lemon Juice and mix well.
6. Add dry ingredients into the wet ingredients, a little at a time while mixing.
7. Fold in Chocolate Chips and Walnuts.
8. Chill cookie dough in the refrigerator for approx 30 minutes.
9. Preheat oven to 375 degrees Fahrenheit.
10. Line baking tray with parchment paper or lightly grease.
11. Using an ice cream scoop, drop portions of cookie dough onto the tray leaving ample space between the cookies (approx 6 cookies per 9 x 13 tray).
12. Bake 13 – 15 minutes until cookies appear golden brown.
13. Cool cookies on the tray for 5 minutes, then transfer them to a cooling rack and cool completely.
14. Store in an air-tight container at room temperature for up to 2 weeks.

Freezing process and baking: I had made a log of the remaining cookie dough and wrapped it with parchment paper twice and put it in a ziploc bag tightly sealed. Night before baking, I took the cookie dough bag out of the freezer and put it in the fridge for defrosting. I took it out an hour before I wanted to bake because it was still very hard and I wanted to add more sugar to it because it wasn’t sweet enough for us.
I added about a 1/4 cup of sugar and mixed well. Put the scoops of cookie dough on cookie tray and baked according to the direction and the cookies were done in 12-13 mins. They were fabulous, warm and gooey.

I made these cookies months ago and been wanting to comment on them. I followed the recipe exactly and they were not as sweet as Chocolate Chip Cookies are suppose to be. I didn’t see a point in adding quick oats; in fact, they got in the way of the taste so I will definitely leave them out next time. They did come out soft from inside and crispy on outside but we didn’t care for the taste. We kept feeling like it was missing something besides more brown sugar or regular sugar.
May I ask why you guys add quick oats? I felt it really got in the way!
One thing I did differently was add sea salt on top of some of the cookies before baking and it does provide a unique salty and sweet taste to it.
I froze half of the cookie batch and plan on making it this weekend with addition sugar and brown sugar and see if the cookies taste better. Will let you know how things went after defrosting the dough and with more sugar.

Sorry you didn’t like the cookies…guess its a personal taste issue. We and our kids absolutely LOVE these! We purposely used less sugar because it has so much chocolate already and the oats add texture and some health factor by replacing some of the white flour. As the recipe has so much butter, we would not call these cookies “healthy” but compared to store bought ones, they are healthier.
Thanks for your quick response. I guess it is a personal taste thing. I had compared the recipe on the back of the chocolate chips bag and most of it is the same including the butter. You guys just added less sugar and added oats and lemon juice.

With these cookies , lady’s after one cookie, i feel satisfied and full, ooo, the chocolate, the smell, the crunch but soft inside!!! If you are careful with the baking (keeping a close eye towards the end and not overbaking), the outer layer is a bit crunchy but the inside is moist and chewy.

Ur kids are very cute… Nice video..Today i tried choco chip walnut cookie.. I made it using cookie sheet tray with wax paper…But more smoke came..Wat is the reason behind it.? I used conventional oven for 375 F for 12 mins…Is wax paper the reason?? I used it again one more time… I made cookie using pizza pan…and it flattens…Its 1st time for me to make it… I tried one more time using cookie sheet with greased butter and placed cookies. It baked less than 8 mins.. it came out good but still it is soft… After that cooled..Outer crust its crispy and inner its soft.. Plz hel pme.. I ll b v highly grateful in thanking u for telling me how to do again step by step for my issues..

The mistake was the wax paper. You have to use parchment paper. Wax paper can be used for baking if you line the bottom of a pan and then cover it completely with something like cake batter. If wax paper is exposed in the oven, the wax will start to melt and smoke. At 375 degrees Fahrenheit, the cookies need to bake for 13-14 minutes if you made them the size we showed. If you made the cookies smaller, the baking time would be less. The cookies are supposed to be a little firm on the outside and nice and soft on the inside.

I packed it and gave to my hubby s friends.They are tired of appreciating abt those cookies 🙂 I made smaller cookie size into greased butter cookie sheet and baked it for about 6 to 8 mins at 350 F… its still soft inside..i need it to be crunchy …If i want to make cookie size smaller then please tell me how many mins to bake and which temperature!!Also i dont have icecream scoop sponn in which ur kids used it..Should i buy? Sometimes, you can get a bitter taste if the flour is not fresh. Also, walnuts become rancid over time and can cause bitterness.

Honestly, we have not tried using wheat flour in this recipe. It will probably work but the texture and taste may be slightly different. Maybe you can try a half batch to experiment.
