Crepes (Savory and Sweet)

Crepes have an exotic charm – the name and the country of origin! A street food in France, they are great when you have to have them on the go or just a sit-down romantic meal. The part that we love is that they can be customized to suit any palate, including the pickiest of eaters. Make them for a main course and/or as a dessert and they are going to be loved.

Prep Time: 10 min
Resting Time: 2 hours minimum
Cook Time: 2 min each
Makes: 12 (10″)

Ingredients:

All-Purpose Flour – 1 cup
Salt – 1/4 tsp
Eggs – 2, large
Milk – 1 3/4 cup
Melted Butter – 3 tbsp

Oil – for cooking

Ideas For Filling:
Savory-
Cheese (any)
Spinach
Tomatoes
Eggs (scrambled or boiled)
Artichokes
Olives
Paneer
Capers
Mushrooms
White Sauce

Sweet-
Fruits
Peanut Butter and Jelly
Whipped Cream
Sugar
Custard
Ice Cream
Jams

Method:

1. In a bowl, mix in Flour, Salt, Eggs, Milk and the Melted Butter in that order.
2. Mix well until incorporated well.
3. Allow the batter to rest for minimum 2 hours or overnight in the refrigerator.
4. For cooking the Crepes, heat a 10″ non-stick skillet and drizzle a few drops. Wipe off the Oil with a paper-towel.
5. Pour a ladle full of Batter and quickly swirl the pan to spread the batter evenly.
6. Allow the Crepe to cook for about 1 minute or so till the edges get a little color.
7. Flip the Crepe and allow it to cook on the underside as well for 30 seconds.
8. Flip and sprinkle the Cheese, if making savory crepes.
9. Remove from skillet and fill the Crepe, roll or fold and serve.

Tips:
1. Make all the Crepes and store in the fridge, warm as serve as needed.
2. Batter has a good shelf-life in the fridge, upto 2-3 days

    I am a constant follower of your site since last 2.5 yrs. I must say you have enriched my culinary skills to heights. You have introduced me to so many non Indian cuisines…and here is one more…Crepes 🙂 Wish to try them instantly, but for want of cheese and butter 🙁 I do not keep these at home normally. But have to have these for crepes.

  5. Hi Hetal and Anuja,I am a big fan of your website! You said that the crepes could be stored in the refrigerator. How do you manage that without them sticking to each other? Also how do you recommend reheating them before serving. I am planning to make these for company and want to do it efficiently without compromising on taste!! Thanks!

    1. Hi Parul,

      They will not stick – allow them to cool down a bit before stacking them OR just layer it with wax paper between the crepes. You can reheat them in a warm skillet or few seconds in the microwave.

    2. Also, if you have the time and since you will be serving them to company, we suggest that you try this method out – just to get a handle on it.

    1. Once you have the basic crepe, you can really fill it with anything you like. As long as the potatoes are cooked, they should taste good.

      1. Yes I did. My only question is : I got a little smell of egg even after I made the crepes. Is this normal? Or did I add extra eggs/more quantity?

    1. Hmmm….still trying to figure out what you mean by “odd combination”. If you mean the spinach, artichoke and feta, its really not “odd” at all. Give it a shot.

  8. I had something similar in Zanzibar (Africa) and they call crepes as pizzas!! But anyway, I had one filled with mango slices and nutella and it was absolutely delicious!

  9. The same thing can be made without the egg, add alittle semolina instead & wow! is your day, filling can be sweet or non sweet, the taste is even better. Go on try…

Anuja you said pregnant this clicked me why don’t you add some salad recipes with raw vegetable salads or half cooked vegetables or beans salads so that it make a nutritional and quick diet for pregnant females. Specially for females like me who have just moved to US and keep looking at those dressing in store and wondering how to best use them.

      Yes, you can add vanilla if you like. We don’t add it because we can use the crepes for savory as well as sweet versions. Vanilla might not taste good with the savory ones.

    Just been thru all your tips n found the egg substitute.
    For all the other who benefit not just from what Hetal & Anuja share, but also from the responses, here is the substitue:

    1 egg = 1 tbl spoon flaxseed powder+3 tbl spoons warm water

    and keep aside for 10 min

    1. Hi Gauri,

      The flaxseed egg replacer works great for some things but it is not a go-to for all egg replacement. We have not tried it in this recipe but it may not work as well as for baking recipes.

  13. The butter u used is unsalted or salted? I had crepes just near the Eiffel Tower on a cold winter night in dec. thinking about the ur Paris Episode,it was amazing to see them make crepes(smoothing it out with that wiper kind of spatula, Happy…….. Now I can make it myself at home…without worrying about spending 5 euros for a single crepe!!!!!

      Nothing like gazing at the Eiffel Tower while enjoying a crepe! 🙂 We always have unsalted butter at home. You could probably use salted butter…just leave out the salt in the recipe.

      1. Very right,it was very cold ,freezing…in dec,and that warm crepe tasted yumm….and gave me the energy to brave the chill and head towards the parking lot after a tiring day and jetlag on top of that.This crepe recipe freshens…. my paris holiday memories….and i think your’s as well hetal.

    My query is regarding the samosa recipe and not crepe. I have to make them for a party so have to make it in big quantity so my only question is if I lightly bake the samosas and freeze them like you you have suggested before to many people, what I wanna know is do I need to defrost or thaw them before frying or is it okay to fry them rightaway? your response will be much appreciated,

    M veg……we dnt eat eggs so plz tel me tht can i prepare ths without eggs or instead of eggs cn i add something else..

    1. Hiya Aparna, it is pretty much the same, there are similar recipes, which use I think baking soda..etc or I’m not sure maybe flaxseeds??

      1. I have tried using the vegan egg replacement, but the crepes turned out really horribble. I will keep trying other stuff & tell you once I succeed. Till then, any one who has a Eureka moment making egg
        less crepes, please share it with us, for the good of the humanity 🙂

          I used buttermilk and milk (half/half) and a pinch of baking powder and it turned out wonderful… tasted the same as the ones with egg…
