Tahini Paste and Sauce are a staple in Mediterranean Cuisine. Every region has a twist and different uses – all the way from using it as a spread, garnish, or a dip, to using it in the cooking. Pair it with our fantastic falafels and pita and you can have spread fit for a king! Now make the Tahini Paste and Tahini Sauce at home and dive into this wonderful cuisine.

Makes:
Tahini Paste – 1/2 cup
Tahini Sauce – 1 cup
Tahini Paste:
Ingredients:
White Sesame Seeds – 1/2 cup
Olive Oil – 1/4 cup + 2tbsp (if storing for a longer time)
Method:
1. Pre-heat oven to 180 degrees C / 350 degrees F.
2. Spread the Sesame Seeds evenly onto a baking sheet.
3. Bake for 5-10 minutes till you start to see the Seeds glisten.
4. Keep shifting the Seeds every 1-2 minutes, to avoid burning the Seeds.
5. Once done, remove and allow to cool totally.
6. Transfer into a Blender or a Food-Processor, add in the Olive Oil and blend into a smooth mixture.
7. Pour into a jar or a bottle and use as needed.
8. Add an extra 2 tbsp Olive Oil if storing for a long time.
9. Store in the fridge for 3-4 weeks, in a clean dry bottle.
10. Mix well before using.
Tahini Sauce:
Ingredients:
Tahini Paste – 1/2 cup
Garlic Cloves – 2-4
Olive Oil – 1 tbsp
Lime/Lemon Juice – 2 tbsp
Salt – 1/2 tsp or to taste
Water – 1/2 cup or as needed
Flat Leaf Parsley – 2-3 sprigs, finely chopped
Method:
1. In a blender, mix in the Tahini Paste, Garlic, Olive Oil, Lime/Lemon Juice, Salt.
2. Blend well and add in a little Water at a time.
3. The Sauce needs to be of a ‘pouring – dip’ consistency.
4. Check the flavors and adjust as needed.
5. Add in some fresh chopped Parsley and mix.
6. Serve as a dip with Pitas, Felafels or as a dressing.

I would like to know what is the blender brand name you were using to blend the Tahini paste? It was the one with Stainless steel jar, it comes very handy in our Indian cooking. Thanks..

Sumeet or Premier makes very good “mixie” style grinders that are great for Indian cooking. You can search online or try some of the larger Indian grocery stores that carry appliances.
If brown sesame seeds are available, do they have to be roasted also? or are they brown because they have already been roasted? Can you recommend a SMALL blender, I need one? THANKS
Wow, so easy and inexpensive compared to wasting a whole jar! Will definitely try this…but as a lazy cook, is there any reason I can’t toast the seeds lightly in a pan? Can’t wait to give it a go….
