Move over Avocado Toast! Here’s a delicious twist to the staple breakfast for health conscious people. For all those of you who are not thrilled about eating a sugary sweet breakfast, this Mushroom Toast recipe could be your new morning thing! In this recipe, mushrooms, onions and bell peppers are lightly stir-fried as a savory topping for toast. Start the day with a bang with this easy and great make-ahead breakfast recipe.
Prep Time: 10 minutes
Cook Time: 10 minutes
Serves: 4-6
Ingredients:
Oil – 1 Tbsp
Mustard Seeds – 1/2 tsp
Curry Leaves – 1 sprig
Onion – 1/2 medium, chopped
Salt – to taste
Mushrooms – 8 oz, chopped
Bell Pepper – 1/2 medium, chopped
Black Pepper – to taste
Cilantro – 5 to 6 sprigs, chopped
Method:
1. Heat Oil in a large flat skillet.
2. Add Mustard Seeds and allow them to pop.
3. Add Curry Leaves and Onions. Mix.
4. Sprinkle little Salt to help onions cook faster and cook until onions are translucent (2-3 minutes).
5. Add Mushrooms and lightly salt. Cook until moisture from mushrooms evaporates.
6. Add Bell Pepper and Cilantro, stir and cook for 1 minutes. Switch off stove.
7. Serve as a topping for toasted bread.
Note: Can be served hot or cold.

Well I know a very simple bread masala recipe. Very simple n delicious .
Tomato 1 medium sized
Onion 1 medium sized
salt to taste
chilly powder 1/2 tsp or to taste
garam masala 1/2 tsp
oil 2 tsp
coriander leaves
bread slices( sandwich top bread)
Procedure:
Finely chop onion & tomato. Add oil in a pan. add onion and fry it until it becomes translucent. Add tomatoes, salt, chilly powder and garam masala. Fry it until tomatoes cook.
garnish with chopped coriander leaves.
Toast bread and spread above masala.

You could use eggs and make something like a egg bhurji. Cook the pepper and onions first and then add beaten and seasoned eggs in and allow them to cook while mixing.

When buying mushrooms, pick ones that are very white with no bruises. Also, if you look under the cap, the ones that are sealed (you cannot see the black/brown ridges) are the freshest. Even if you see the ridges, its okay, but the lighter the color of the ridges, the fresher the mushroom.
This has become my husband’s favorite sandwich! I put this mushroom filling along with some cheese and make toasted sandwiches. They are great to take on trips. The cheese makes it a bit more filling and helps to bind everything together.

If its the filling, same thing can be done with sprouts.
This is good.
In case if anybody interested in sandwich with good filling:
Any kind of vegetable (carrots, potato, even green squash, beans, methi, spinach)
fry onion, and add all the partially cooked vegetables above
cook green the sprouts–> green mung, red mung, masoor, peas)
and add it to the above mixture.
Spices: chilli powder, jeera powder, garam masala
+ salt
